Burnt sugar almonds
This is my own tweaked recipe for burnt sugar almonds. It is probably perfect!
- 250 g almonds
- 170 g sugar (less is more)
- 1/2 ts vanilla sugar
- 1/2 ts cinnamon
- 1/4 ts salt
- 1 dL water
- 1 spoon butter
Preparation
- Bake the almonds at 180C for 10 min in the oven in the middle position.
- Mix sugar, flavors and water in a frying pan until all sugar is dissolved.
- Add the almonds and boil of the water while stirring. Do not use too much heat.
- Continue to stir at medium heat while the almonds are dry and covered in crystallized sugar. -KEEP STIRRING!
- After probably 5-10 minutes the sugar starts to caramellize and melt. Continue stirring until most of the almonds have some parts of it melted and caramellized.
- Add a small spoon of butter to help the almonds not stick to each other.
- Put the almonds for cooling on a baking tray.
- Enjoy delicious almonds!
