Burnt sugar almonds

This is my own tweaked recipe for burnt sugar almonds. It is probably perfect!

  • 250 g almonds
  • 170 g sugar (less is more)
  • 1/2 ts vanilla sugar
  • 1/2 ts cinnamon
  • 1/4 ts salt
  • 1 dL water
  • 1 spoon butter

Preparation

  • Bake the almonds at 180C for 10 min in the oven in the middle position.
  • Mix sugar, flavors and water in a frying pan until all sugar is dissolved.
  • Add the almonds and boil of the water while stirring. Do not use too much heat.
  • Continue to stir at medium heat while the almonds are dry and covered in crystallized sugar. -KEEP STIRRING!
  • After probably 5-10 minutes the sugar starts to caramellize and melt. Continue stirring until most of the almonds have some parts of it melted and caramellized.
  • Add a small spoon of butter to help the almonds not stick to each other.
  • Put the almonds for cooling on a baking tray.
  • Enjoy delicious almonds!
